Overview
Fun is a key part of our lives. I try to do as many things as possible seriously but also with a touch of humour where possible. That’s probably why I love Japanese culture and food so much! It allows you to be playful and the fun bento boxes and accessories are not reserved to kids only. So these meatballs are an easy example of how you can combine good healthy food and fun. They are tasty with their sweet addition of raisins and candied lemon and made of organic lean beef minced meat. Parsley gives a touch of vitamin C and garlic is a super food full of vitamins, minerals and antioxydants. These gluten free healthy meatballs can be eaten as a starter or easily converted to a mini snack for a nice apéro. With vegetable and sweet potato fries they become a great dinner.

Prepare meatballsIn a mixing bowl, place 300g lean beef minced meat, 1 TBSP mini pieces candied lemon, 1 TBSP golden raisins, 6 sprigs flat parsley cut in small pieces with your scissors (keep 2 sprigs for decoration), 1 peeled and crushed garlic clove, 1 TBSP feta cheese cut in very small pieces, 2 TBSP parmesan grated or cut in very small pieces, 1 TBSP Cognac (optional). Add salt & ground black pepper and mix well with a large spoon or your hands. Form about 15 meatballs with the mixture (size of a large walnut), for an apéro snack you may want to make smaller meatballs. |

Cook meatballsIn a large skillet on medium heat place the meatballs and cook for 5 minutes, turn around and cook for another 5 minutes. |

To serveTo serve, place 5 meatballs on each plate, add a parsley leaf below and above each meatball and tick a tooth pick or mini skewer in each meatball. Add a few cherry tomatoes as a side, keep them on their branch to look nicer. |
