Extremely simple and refreshing, perfect for a hot summer day, this ice cream is perfectly delicious. No cream and no refined sugar make it particularly healthy and light. For a vegan version just replace the honey with maple syrup or another plant based sweetener

Prepare ice creamBlend together 6 peeled and stoned peaches, 200ml cashew milk, 1 tsp vanilla powder and 3 TBSP honey |

FreezePour in an ice cream machine for 20min before serving or store in freezer for 30 minutes, mix, put back to freezer for 15 minutes, mix, etc… until serving with a sprinkle of almond powder |
