250g Raspberries
250g Strawberries
A few (for decoration) Mint leaves
1 Can Coconut milk Full fat minimum 60% extract
70g Birch sugar (xylitol) or other type of sweetener
Vanilla powder
1 TBSP Coconut powder or coconut flakes

This is one of the quickest dessert to prepare and it is delicious. In addition it is dairy free and very light thanks to the use of natural sweetener. Red berries are among the healthiest foods, are rich in fiber, antioxydants, vitamins and have anti-inflammatory properties

Utensils

  • 1 Container for the freezer & 1 whisk or ice cream machine
  • 1 Blender

Menu steps

Prepare coconut ice cream

If possible, place 1 can coconut milk in the fridge the night before. In a blender mix until smooth 1 can coconut milk, 1 tsp vanilla powder, 1TBSP coconut powder and 70g birch sugar (or other natural sweetener)

Freeze coconut mixture

If you use an ice cream machine keep the coconut mixture in the fridge and pour it in the machine 20 minutes before serving.
If you do not use an ice cream machine pour the mixture into a container for the freezer, freeze for 30 minutes, whisk and place back in the freezer. After another 30 minutes mix again with a spoon and place back in the freezer. Do this again every 30 minutes until you serve

Prepare Strawberries

Hull 250g strawberries and cut them in 4 pieces

To serve

Place a mix of raspberries and strawberries in individual dessert bowls and add one or two spoons coconut ice cream. Decorate with a couple of fresh mint leaves
