This can be a lovely dessert when you serve dinner for just 2-3 guests because the preparation is very quick but the cooking time for each set of 2 waffles is a bout 5 minutes. It is lighter than regular waffles thanks to the grain and gluten free flours used. Therefore it will match easily with any other main course recipe from my blog. If you are a chestnut lover you’ll definitely enjoy these waffles, they are crunchy outside and soft inside, not quite the same as the regular ones but very enjoyable. Be creative with toppings of any type, I personally love maple syrup, other nice alternatives are fruit compote (e.g. apple, berries), honey, chocolate, chestnut cream (yummy yet not paleo unless homemade with honey instead of sugar). You can also eat these waffles with salty toppings, for example for lunch

Prepare the batter

Separate 2 egg whites from their yolks, add a pinch of salt to the egg whites and beat them until stiff using electronic or manual whisk. In a bol mix the 2 yolks with 1 cup almond flour, 1 cup chestnut flour, 1 TBSP tapioca flour, 3 TBSP coconut oil, 1 cup almond milk, 1 pinch baking soda, 1 pinch of salt, 1 TBSP maple syrup & 10 ready to eat cooked chestnuts broken down in small pieces. Mix well and add the firmly whipped egg whites, lift and stir delicately with a spatula to keep an airy consistency with no more large egg white bits

Cook waffles

Make sure your waffle iron is sufficiently oiled. Pour one third of the batter on your hot waffle iron (for 2 waffles). Cook about 5 minutes and repeat 3 times (should get 6 waffles in total). Serve 2 waffles per guest and add toppings you like (maple syrup, berries, etc...)
