Overview
The perfect starter if you want to prepare a dish in no time which is super healthy and looks gorgeous. It is very easy to make even if you have no clue about cooking. Kohlrabi is a lovely veggie, tastes radish without the bitterness and with a bit of a sweet taste. Note that you can use any herbs, types of pepper, types of oil, this version of the recipe is just to give you an example of a combinaison which works very well. I have used a fleur de sel flavoured with orange peel which I do myself but regular fleur de sel is fine too. Kohlrabi has great nutritious benefits, it contains a lot of vitamin C & B6, it’s very high in fiber, so it is good for your immune system, diabetes and heart diseases.

- 1 Thin grater

Prepare kohlrabiPeel 2 kohlrabis and cut them in very thin slices using a mandoline or food processor. Display the slices on 3 individual plates. Slices can overlap with each other but it should only be 1 layer, else it will not be well seasoned. Pour some olive oil on the slices (about 1 TBSP in total, just enough to give a bit of taste). |

To serveGrate some orange peel on the kohlrabi carpaccio, sprinkle mint leaves cut very thinly with the scissors. Sprinkle a bit of fleur de sel (I use orange peel flavoured fleur de sel) and grind some pink peppercorn. That's it! Keep in the refrigerator until serving. |
